- Cultivation without and with reduced pesticides in a production area with a history of approximately 800 years A traditional farming method that has been used since the Muromachi period (1333-1573). Straw and reeds are used to block sunlight to reduce astringency and increase the flavor component (theanine) to the utmost limit.
- Hand-picked" and "stone-ground" by skilled artisans The single-core, double-leafed beans are carefully picked by hand and ground over time on a stone mill to produce creamy, smooth particles of 5 to 10 microns.
